Muffins for my muffin top

It seems like every morning we are going bonkers trying to get out the door in time. This could likely be avoided by planning ahead/not hitting snooze 18 times/having some iota of time management skills. Nevertheless, I'm tired of throwing Pop Tarts into the backseat and hoping that the kid will be fooled into thinking that it counts as breakfast. So, after hitting rock bottom today, I came up with a recipe for a delightful breakfast muffin that I can throw into the backseat with some dignity and pride. Blaise tried one and loved it; hopefully you will, too :)



Banana Fana Fo Fana Breakfast Muffins
yield 30 muffins

2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup butter
3/4 cup brown sugar
2 cups overripe bananas, mashed (more or less)
2 eggs, beaten
1 tsp pure vanilla extract
1/2 cup natural peanut butter
1/4 cup honey (buy local!)
12 oz bag chocolate chips

Turn that oven on, baby! Heat 'er up to 350 degrees and get ready to make some magic happen. In a bowl, obviously, stir together the flour, baking soda, salt, and cinnamon. Now get out that big, expensive mixer and cream together the butter and brown sugar. Stir in the eggs, bananas, vanilla, peanut butter, and honey. Add the flour mixture into the banana mess and mix it up until incorporated. Mix in the chocolate chips, doing your best not to siphon off too many. 
Fill muffin cups about 3/4 full and sprinkle with granola. Bake 'em up for 20 minutes, or until inserted toothpick comes out clean.

*I love to make my own granola. It's cheap, easy, and delicious! If you have a store near you with bulk oatmeal, it will make this even cheaper :) My favorite granola recipe is this one from Chow.com - http://www.chow.com/food-news/55265/how-to-make-granola/
I like to add a bit more cinnamon and some vanilla.
