10,000 pancakes can't be wrong

It's been a super crazy month and I have so much to share with you! I'll start with breakfast and work back from there :)

Blaise woke up with a hankering for pancakes. So, in true Jen style, I made what seemed like 10,000 pancakes. Thank goodness for the handy griddle my parents gave us for Christmas, or I would have been flipping pancakes until next week. After a quick inventory of the freezer and pantry, we came up with these amazing Chocolate Chip and Cranberry Pancakes. We loved them and we hope that you do, too!


Chocolate Chip and Cranberry Pancakes

makes about 30 pancakes (using an ice cream scooper), feel free to cut recipe in half :)

2-1/2 c flour
5 tsp baking powder
4 tbl sugar
1/2 tsp cinnamon
1-1/2 tsp salt
2 eggs
2-1/2 c milk
1 tsp vanilla extract
6 tbl melted butter
12oz bag chocolate chips
10 oz bag frozen cranberries

Combine your dry ingredients. Melt the butter and pour into wet ingredients, keep stirring until completely mixed and eggs are beaten. Pour wet mixture into the dry and add chocolate chips and cranberries. Stir just until mixed - lumps are ok! Preheat your griddle or pan and allow the pancake mix to rest for a few minutes. Cook them up and enjoy!
